Ingredients
- 280 g plain white flour
- 100 g light brown sugar
- 225 g vegan butter
- 500 g baking apples
- 500 ml oat milk
- 90 g corn flour (cornstarch)
- Vanilla bean paste
Instructions
- Preheat oven to 180°C (350°F). In a bowl, mix flour, brown sugar, cinnamon, nutmeg, and cold vegan butter until crumbly. Press into a 9×13 inch baking dish.
- Sauté diced apples with lemon juice, cinnamon, sugar, and vegan butter until tender (5–7 minutes). Allow to cool slightly.
- Whisk together oat milk, vanilla bean paste, caster sugar, coconut milk, corn flour, and turmeric in a saucepan over medium heat until thickened.
- Pour half of the custard over the base. Layer cooked apples on top and cover with remaining custard. Sprinkle crumble topping evenly.
- Bake for about 60 minutes or until golden brown on top. Cool completely before cutting into squares.
