  • 1 cup sugar
  • 1/3 cup all-purpose flour

  • 1/4 teaspoon cinnamon

  • 1 1/4 cups all-purpose flour (for topping)
  • 1 egg yolk
  • 3/4 cup granulated sugar (for topping)
  • 1/4 cup cold butter (sliced)
  • 1/4 cup buttermilk
  • 1 tablespoon sugar (for topping)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon kosher salt (for topping)

Instructions

  1. Preheat the oven to 375°F.
  2. Drain the canned peaches and place them in a greased 9×13 baking dish.
  3. In a bowl, mix together the filling ingredients: 1/3 cup flour, cinnamon, nutmeg, and salt. Gently combine with the peaches.
  4. In another bowl, whisk together the dry topping ingredients: flour, sugar, baking powder, and salt.
  5. In a separate small bowl, whisk the egg yolk with buttermilk and then mix it into the dry ingredients until just combined.
  6. Pour the topping over the peaches evenly and scatter cold butter pieces on top. Sprinkle with additional sugar.
  7. Bake for 30–40 minutes until golden brown and bubbly.
