  • 2 poblano peppers, chopped
  • 28 ounces crushed fire-roasted tomatoes
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (8 ounce) tomato paste
  • 1 can (4 ounce) diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 2 bay leaves
  • salt to taste
  • 23 cups chicken or beef broth
  • 1 can mixed chili beans, drained
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • avocado and Greek yogurt, for serving

Instructions

  1. Brown ground beef in a skillet over medium-high heat; drain fat.
  2. In a slow cooker, combine cooked beef with onions, poblanos, tomatoes, spices, butter, bay leaves, and broth.
  3. Cook on low for 4-6 hours or high for 2-3 hours.
  4. About 30 minutes before serving, stir in cream cheese and cheddar until melted.
  5. Remove bay leaves before serving; top with fresh cilantro or green onions if desired.
