- 6 slices smoked beef bacon
- 2 boneless skinless chicken breasts (about 1 pound), cut into cubes
- ½ cup chopped yellow onion
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 ounce packet ranch seasoning
- 4 cups unsalted chicken stock
- ½ pound penne pasta
- 6 ounces cream cheese
- 10.5-ounce can cream of chicken soup
- 8 ounces shredded Colby jack cheese (divided)
- Fresh chopped parsley (for garnish)
Instructions
- In a large skillet over medium heat, cook diced beef bacon until crispy, about 9-11 minutes. Remove and set aside.
- In the same skillet, drain excess grease, leaving about 2 tablespoons. Add cubed chicken, onion, salt, and pepper; cook until lightly browned (5-6 minutes).
- Stir in ranch seasoning and chicken stock; bring to a boil before adding penne pasta.
- Lower heat, cover the skillet, and cook for 15-20 minutes or until pasta is tender.
- Mix in cream cheese, cooked bacon (except reserved), and 1½ cups of shredded cheese.
- Top with remaining cheese; cover for about 3-4 minutes until melted.
- Garnish with reserved bacon and parsley before serving.
