  • ½ cup unsweetened applesauce
  • ⅓ cup honey
  • 4 tablespoons oil (OR melted butter OR melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini (excess moisture squeezed out)

Instructions

  1. Preheat your oven to 360°F and line two cookie sheets with parchment paper.
  2. In a large bowl, mix quick oats, old fashioned oats, oat flour, ground flax, walnuts, cinnamon, baking powder, and salt until combined.
  3. Add unsweetened applesauce, honey, oil, eggs, vanilla extract, and shredded zucchini to the dry mixture; stir until a cohesive dough forms.
  4. Scoop about 2 tablespoons of dough per cookie onto the prepared sheets, spacing them 2 inches apart. Flatten slightly.
  5. Bake for 12-14 minutes until lightly golden. Cool on the sheet for 5 minutes before transferring to a wire rack.
