- 1 tbsp sesame oil (divided)
- 1 cup boneless chicken breast (sliced)
- 1 cup bell peppers (sliced)
- 1 cup carrots (julienne)
- 2 green onions (chopped)
- 3 tbsp low-sodium soy sauce
- 1/2 cup vegetable broth
- 2 garlic cloves (minced)
Instructions
- Cook udon noodles according to package instructions. Drain and set aside.
- Heat half the sesame oil in a skillet over medium-high heat. Add sliced chicken and cook until browned, about 5-7 minutes. Remove from pan.
- In the same skillet, add remaining sesame oil if needed. Stir-fry bell peppers and carrots for 3-4 minutes until tender-crisp.
- Return chicken to the skillet, add cooked noodles, soy sauce, and vegetable broth. Stir until combined and heated through.
