  • 12 oz crumbled goat cheese (room temperature)
  • ½ cup Greek yogurt
  • 4 tbsp honey (split)
  • 2 tbsp olive oil
  • 2 large shallots (thinly sliced)
  • 12 medjool dates (pitted and chopped)
  • Fresh rosemary (for frying)

Instructions

  1. Preheat the oven to 400°F. Lay bacon in a cast-iron skillet and bake for about 25 minutes until crispy.
  2. In a food processor, combine goat cheese, Greek yogurt, 2 tbsp honey, olive oil, water, salt, and black pepper; process until smooth.
  3. Drain excess fat from the bacon and use the skillet to fry fresh rosemary until crisp.
  4. Caramelize shallots in the same skillet; add chopped dates and apple cider vinegar. Simmer until sticky.
  5. Spoon the date mixture over the whipped goat cheese; top with crumbled bacon and fried rosemary. Serve warm with toasted bread.
