Ingredients
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 2 stalks celery (finely chopped)
- 1 ½ cups cubed potatoes (around 4–5 small potatoes)
- 2 carrots (peeled and sliced)
- Pinch of salt
- ½ cup dry green or brown lentils (rinsed)
- ½ tsp thyme
- ½ tsp marjoram
- 6 cups vegetable stock
- ⅓ cup shredded cheddar cheese
- 2 tbsp sour cream
Instructions
- Heat olive oil in a large pan over medium heat. Sauté the onion, garlic, and celery until soft.
- Add cubed potatoes and carrots; season with salt and fry for about 1–2 minutes.
- Stir in lentils, thyme, marjoram, and vegetable stock. Bring to a boil then reduce heat to simmer for 25–30 minutes until lentils are tender.
- Remove from heat, let cool slightly, then stir in cheese until melted.
- Dissolve sour cream in a small portion of soup before adding back into the pot.
- For creaminess, blend a portion of the soup if desired.
- Season to taste with salt and pepper before serving.
