  • 1 teaspoon apple cider vinegar
  • 2 tablespoons fresh pineapple juice
  • 2 teaspoons freshly grated ginger
  • 2 cloves garlic, minced
  • ½ teaspoon ground turmeric (or 1 teaspoon freshly grated turmeric)
  • 1 (14 oz) package extra-firm tofu
  • 2 cups fresh cubed pineapple

Instructions

  1. Wrap the tofu in a paper towel to remove excess moisture. Cut it into large cubes (about 1½ inches).
  2. In a mixing bowl, combine tamari, apple cider vinegar, pineapple juice, ginger, garlic, and turmeric. Whisk until well blended.
  3. Add the tofu cubes to the marinade and toss gently to coat them evenly. Cover and marinate for at least 30 minutes or up to 24 hours.
  4. Preheat the grill to medium-high heat. Oil the grates to prevent sticking.
  5. Thread the marinated tofu and pineapple onto skewers.
  6. Grill for about 10 minutes total, turning occasionally until golden brown.
  7. Serve hot with optional garnishes such as cilantro or diced onion.
