  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup pumpkin puree
  • 1/4 cup maple syrup
  • 2 tablespoons oat milk
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla bean paste
  • 1/2 teaspoon pumpkin pie spice
  • Vegan whipped cream
  • Pumpkin pie spice (for sprinkling on top)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a flax egg by mixing ground flaxseed with water and letting it thicken for about 5 minutes.
  3. In a large bowl, cream together vegan butter, white sugar, and brown sugar until smooth. Stir in the flax egg and vanilla.
  4. Gradually mix in flour, pumpkin pie spice, baking powder, and salt until just combined.
  5. Roll dough into small balls, coat in sugar, and place on a lined baking sheet.
  6. In another bowl, mix together the pumpkin filling ingredients until smooth.
  7. Press each cookie ball slightly to create an indentation, then fill with pumpkin mixture.
  8. Bake for about 15 minutes until edges are golden. Let cool before serving.
