  • 1/4 cup cold vegan butter (cubed)
  • 1/3 cup soy milk (or any other plant-based milk)
  • 2 tablespoons olive oil
  • 1/2 large onion (finely diced)
  • 5 cloves garlic (minced)
  • 2 medium carrots (peeled & diced)
  • 2 stalks celery (diced)
  • 4 ounces mushrooms (thinly sliced)
  • 1 tablespoon tomato paste
  • 1 tablespoon vegan worcestershire sauce
  • 1 teaspoon dried parsley
  • salt & pepper to taste
  • 15 ounce can cannellini beans (strained & rinsed)
  • 2.5 cups vegetable broth
  • 12 teaspoons fresh thyme (leaves only)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
  2. Stir in minced garlic, carrots, and celery; cook until softened.
  3. Add sliced mushrooms and cook until they release moisture.
  4. Mix in tomato paste, vegan Worcestershire sauce, dried parsley, salt, pepper, cannellini beans, vegetable broth, and thyme leaves. Bring to a gentle boil and then simmer.
  5. For the dumplings, whisk flour, baking powder, dried parsley, salt, and pepper in a mixing bowl. Cut in cold vegan butter and mix in soy milk until just combined.
  6. Drop spoonfuls of dumpling batter onto the stew’s surface. Cover and steam for 15-20 minutes until fluffy.
