Ingredients

  • 2 large chicken breasts
  • 2 cups baby potatoes, halved
  • 2 cups sweet potatoes, diced
  • 1 cup tri-color quinoa, uncooked
  • 2 cups fresh baby spinach or arugula
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. On a baking tray, toss baby and sweet potatoes with olive oil, thyme or rosemary, salt, and pepper. Roast for 25-30 minutes until golden brown.
  3. Season chicken breasts with olive oil, garlic powder, smoked paprika, salt, and pepper. Sear in a pan over medium heat for 6-7 minutes on each side until fully cooked. Let rest before slicing.
  4. In a pot, combine quinoa with water; bring to a boil then simmer for about 15 minutes until fluffy. Mix in lemon juice and greens.
  5. Assemble your bowl by layering quinoa at the bottom followed by roasted veggies and sliced chicken. Garnish with chopped parsley.
