  • 2 salmon fillets (skin-on)
  • 4 cups mixed baby potatoes
  • 1 bunch asparagus
  • 1 cup shredded mozzarella cheese
  • Olive oil
  • Paprika
  • Garlic powder
  • Salt
  • Pepper
  • Dried oregano
  • Fresh parsley

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Toss baby potatoes with olive oil, oregano, salt, and pepper. Spread on the baking sheet and roast for 25 minutes.
  3. Season salmon fillets with olive oil, paprika, garlic powder, salt, and pepper.
  4. In a skillet over medium-high heat, cook salmon skin-side down for 4-5 minutes; flip and cook for another 3-4 minutes.
  5. Toss asparagus with olive oil, salt, and pepper; add to the baking sheet during the last 10 minutes of potato roasting.
  6. Sprinkle mozzarella cheese on asparagus in the last 3 minutes of roasting until bubbly.
  7. Serve grilled salmon alongside roasted potatoes and cheesy asparagus.
