  • 2 skin-on salmon fillets
  • 4 cups baby potatoes (mixed red and yellow)
  • 1 bunch asparagus
  • 3/4 cup shredded mozzarella cheese
  • Olive oil
  • Garlic powder
  • Paprika
  • Dried oregano
  • Fresh parsley
  • Salt
  • Pepper
  • Lemon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss baby potatoes with olive oil, oregano, salt, and pepper. Spread on the baking sheet and roast for 25 minutes.
  3. Rub salmon fillets with olive oil, paprika, garlic powder, salt, and pepper.
  4. In a skillet over medium-high heat, grill salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  5. Toss asparagus with olive oil, salt, and pepper. Add to the baking sheet during the last 10 minutes of potato roasting.
  6. In the last 3 minutes of roasting, sprinkle mozzarella over asparagus until melted.
  7. Serve hot alongside roasted potatoes and grilled salmon.
