  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp crushed black pepper or chili flakes
  • 2 medium potatoes (for fries)
  • 1 cup jasmine or basmati rice

Instructions

  1. Prepare fries by boiling potatoes for 5 minutes; then bake at 200°C for 20 minutes or shallow fry until golden brown.
  2. Rinse rice until water runs clear; simmer with water and salt for about 12 minutes.
  3. Marinate chicken in cornstarch and soy sauce while preparing vegetables.
  4. Sear chicken in a hot wok until golden brown; remove from pan.
  5. Stir-fry onions and garlic in the same pan before adding bell peppers; cook until slightly soft.
  6. Combine chicken back into the pan with remaining sauces and spices; stir well.
  7. Plate rice in dome shapes, serve alongside stir-fry and crispy fries.
