  • 2 (14 oz) cans white kidney beans (drained)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1/2 cup sour cream
  • Salt & pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, sauté the chopped onion in olive oil until soft (about 5 minutes).
  2. Add the ground turkey; cook until no longer pink (around 5 minutes), breaking it up as you stir.
  3. Stir in diced tomatoes, minced garlic, green chilies, beans, and all spices until well combined.
  4. Bring to a simmer; reduce heat and let cook gently for 15-20 minutes while stirring occasionally.
