- 6 slices cooked bacon, chopped
- 2 tablespoons butter
- 1/2 large or 1 small onion, thinly sliced (about 2 cups)
- 6 ounces or 4 cups baby spinach
- Salt and pepper, to taste
- 2 cups cherry tomatoes, halved
- 1 tablespoon Everything But The Bagel seasoning
- 1 1/2 cups grated Gruyere cheese
- 1 1/2 cups grated sharp cheddar
- 8 large eggs
- 2 cups milk
- 1 tablespoon dijon mustard
- 6 ounces cream cheese, cut into bite-sized pieces
- Optional: sliced scallions, for garnish
Instructions
- Preheat oven to 375°F and grease a 9×13 baking dish.
- Sauté onions in butter until translucent; add spinach and season.
- In a bowl, mix bagel pieces, sautéed veggies, bacon, tomatoes, cheeses, and seasoning.
- In another bowl, whisk eggs with milk and pour over the mixture.
- Bake for 45-55 minutes until golden brown and set.
- Cool for 10 minutes before slicing; garnish with scallions if desired.
