Ingredients

Scale
  • 2 pounds chicken breasts or thighs
  • 3 tablespoons olive oil
  • 1/4 cup coconut milk
  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar
  • 1 tablespoon chili paste
  • 1/31/2 cup smooth peanut butter

Instructions

  1. In a medium bowl, whisk together marinade ingredients: soy sauce, brown sugar, chili paste, lime juice, fish sauce, basil, coriander, ginger, garlic powder, and turmeric. Reserve 1/3 cup for later.
  2. Add olive oil to the reserved marinade and pour over chicken in a zip-top bag. Seal and marinate for at least 6 hours or overnight.
  3. Soak wooden skewers in water for 30 minutes before threading chicken strips onto them.
  4. Cook skewers using your preferred method: bake (350°F for 15-20 minutes), grill (3-4 minutes per side), or skillet (2-3 minutes per side).
  5. For peanut sauce, heat the reserved marinade with coconut milk until boiling. Stir in peanut butter until combined.
