  • 1 tbsp peanut or coconut oil
  • 1 1/2 lb boneless skinless chicken breast
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp fresh ginger, minced
  • 1 can California cling peach slices
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • Juice of one lime
  • 1 tsp salt
  • 1 tbsp Thai chili sauce
  • 1 tbsp rice vinegar
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper, cored and thinly sliced
  • 1/4 cup chopped peanuts
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Season chicken with salt and cook in the skillet until browned on both sides (about 3 minutes each).
  3. Remove chicken; sauté onion, garlic, and ginger in the same skillet for about 3 minutes.
  4. Whisk together reserved peach juice, honey, soy sauce, fish sauce, lime juice, and cornstarch.
  5. Return chicken to the skillet with the sauce mixture and peach slices; stir until thickened.
  6. Simmer covered for an additional 5 minutes until chicken is cooked through.
  7. Garnish with chopped peanuts and cilantro before serving.
