  • 1 tablespoon sesame oil
  • ¼ cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce)
  • 2 tablespoons Thai sweet chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup cashews (chopped)
  • Lettuce leaves (butter lettuce preferred)

Instructions

  1. In a skillet over medium-high heat, add sesame oil. Sauté onions for 2–3 minutes until translucent. Add garlic and ginger; cook for another 2 minutes.
  2. Add ground chicken to the skillet, breaking it apart while seasoning with salt and pepper. Cook until golden brown and no longer pink, about 3–4 minutes.
  3. In a small bowl, mix together Tamari, chili sauce, lime juice, and maple syrup. Pour this sauce over the cooked chicken and stir in chopped cashews. Cook for an additional 2 minutes on low heat.
  4. Remove from heat and let cool slightly before adding shredded carrots and chopped scallions.
  5. Assemble by spooning the mixture into lettuce leaves and topping with sesame seeds.
