  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté the onion until translucent, about 5 minutes.
  2. Add garlic and ginger; cook for an additional minute until fragrant.
  3. Stir in curry powder, turmeric, and cumin; toast for 30 seconds.
  4. Add sweet potatoes and chickpeas, stirring well to coat with spices.
  5. Pour in coconut milk and enough water to cover the vegetables. Bring to a boil, then reduce heat and simmer for 15-20 minutes until sweet potatoes are tender.
  6. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
