Ingredients
- 4 ears of corn
- 2 ripe peaches, sliced or diced
- ¼ cup red onion, finely chopped
- 3 Tbsp cilantro, chopped
- 1 medium jalapeño, deseeded & thinly sliced
- 1–2 large avocados, diced
- 3 Tbsp lime juice
- 3 tsp honey
- Salt & black pepper to taste
Instructions
- Cook the corn using your preferred method (boiling or grilling). Once cooled, cut the kernels off the cobs and place them in a large bowl.
- In a small bowl, whisk together lime juice and honey until the honey dissolves. Season with cracked black pepper.
- Add peaches, red onion, cilantro, and jalapeño to the corn. Toss gently with the vinaigrette until well-coated. Season with salt as needed; chill in the refrigerator for 10-20 minutes.
- Just before serving, add diced avocado to the salad or mix it in for extra creaminess.
