Ingredients
- 2.5 – 3 lbs boneless beef chuck roast
- 2 tablespoons olive oil
- 1 large yellow onion
- 2 large carrots
- 2 celery stalks
- 4–6 cloves garlic
- 1/4 cup tomato paste
- 1 cup dry red wine
- 1 can crushed tomatoes (28 oz)
- 1 can diced tomatoes (14.5 oz)
- 1 cup beef broth
- bay leaves
- oregano
- thyme
- rosemary
Instructions
- Pat beef cubes dry and season with salt and pepper.
- Sear beef in a skillet until browned on all sides.
- Sauté onions, carrots, celery, and garlic in the same skillet until softened.
