  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/3 cup granulated sugar (for filling)
  • 2 cups coarsely chopped fresh strawberries
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 350°F and line an 8-inch square pan with aluminum foil and cooking spray.
  2. In a large microwave-safe bowl, melt the butter and then mix in flour, oats, sugars, and salt until combined.
  3. Set aside 1 heaping cup of the mixture for the topping. Press the remaining mixture into the bottom of the prepared pan to form the crust.
  4. In another bowl, combine strawberries, sugar, lemon juice, and cornstarch; spread this mixture over the crust.
  5. Sprinkle reserved crumble topping over the strawberry filling.
  6. Bake in preheated oven for about 30 minutes or until golden brown.
  7. Allow to cool before slicing into squares.
