  • 1/3 cup granulated sugar
  • 1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, hulled and quartered
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons sugar, for sprinkling
  • 2 tablespoons heavy cream
  • 3/4 cup confectioners' sugar
  • 1 teaspoon vanilla extract
  • Tiny pinch of salt (1/8 teaspoon or less)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  3. Cut in very cold butter until the mixture resembles coarse meal.
  4. In a separate bowl, whisk together egg, whole milk, and heavy cream. Add to the flour mixture and stir until just combined.
  5. Gently fold in quartered strawberries.
  6. Shape the dough into an 8-inch circle on a floured surface and cut it into 8 wedges.
  7. Transfer to the prepared baking sheet, brush with beaten egg wash, sprinkle with sugar, and bake for 18 minutes or until golden brown.
