- 2 salmon fillets (150-180g each)
- 12–14 asparagus spears
- 300g baby potatoes
- 1 garlic clove, minced
- 2 tbsp honey
- 1 tbsp lemon juice
- Olive oil, salt, and pepper
- 1/2 cup shredded mozzarella or gruyère cheese
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Toss baby potatoes with olive oil, Italian herbs, salt, and pepper. Spread on one side of the baking sheet and roast for 30-35 minutes.
- In a mixing bowl, combine honey, lemon juice, minced garlic, soy sauce (or tamari), Dijon mustard, and balsamic glaze. Brush over salmon fillets.
- After roasting potatoes for about 10 minutes, add salmon to the other side of the tray. Roast together for an additional 15-18 minutes until cooked through.
- Meanwhile, toss asparagus with olive oil, salt, and pepper. Place in an oven-safe dish or second tray; top with cheese and bake for about 10-12 minutes until tender.
