  • 2 salmon fillets (150-180g each)
  • 1214 asparagus spears
  • 300g baby potatoes
  • 1 garlic clove, minced
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • Olive oil, salt, and pepper
  • 1/2 cup shredded mozzarella or gruyère cheese

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Toss baby potatoes with olive oil, Italian herbs, salt, and pepper. Spread on one side of the baking sheet and roast for 30-35 minutes.
  3. In a mixing bowl, combine honey, lemon juice, minced garlic, soy sauce (or tamari), Dijon mustard, and balsamic glaze. Brush over salmon fillets.
  4. After roasting potatoes for about 10 minutes, add salmon to the other side of the tray. Roast together for an additional 15-18 minutes until cooked through.
  5. Meanwhile, toss asparagus with olive oil, salt, and pepper. Place in an oven-safe dish or second tray; top with cheese and bake for about 10-12 minutes until tender.
