Ingredients
- 16 ounces brown rice noodles
- 3 large cloves garlic
- 1 tablespoon fresh ginger, grated
- 2/3 cup creamy peanut butter
- 4 tablespoons low sodium tamari or soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1–2 tablespoons sriracha (to taste)
- Optional: crushed peanuts and scallions for garnish
Instructions
- Cook the noodles as per package instructions in boiling water. Drain and set aside.
- In a sauté pan, heat oil over low heat; add minced garlic and sauté until golden (about 2 minutes). Add grated ginger, cooking for another minute.
- Remove from heat and stir in peanut butter, tamari, rice vinegar, sesame oil, sriracha, and enough hot water to achieve desired sauce consistency.
- Combine half the sauce with the cooked noodles, adjusting to taste with additional sauce or seasoning.
