Ingredients

Scale
  • 1 large globe eggplant
  • 4 tablespoons olive oil
  • 2 teaspoons red apple vinegar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon Aleppo pepper (adjust to taste)
  • 2 teaspoons salt (for draining)
  • Fresh parsley and mint for garnish

Instructions

  1. Prepare the eggplant by slicing it into 3/4-inch thick rounds.
  2. Sprinkle salt on both sides of the slices and let them drain on paper towels for 40 minutes.
  3. While the eggplant drains, whisk together olive oil, vinegar, lemon juice, garlic puree, and Aleppo pepper in a bowl.
  4. Preheat your grill to medium-high heat.
  5. After draining, press the eggplant slices to remove excess moisture and brush both sides with olive oil.
  6. Grill each slice for 4-5 minutes per side until charred and tender.
  7. Once grilled, place the eggplant in a baking dish and drizzle with marinade; let sit for 10-15 minutes before serving.
