Ingredients

Scale
  • 2 boneless, skinless chicken breasts (halved horizontally)
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 ½ cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon hot sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 4 brioche buns
  • Pickle slices
  • Butter (for toasting buns)

Instructions

  1. Combine buttermilk and hot sauce in a large bowl. Add chicken breasts, ensuring they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour.
  2. In a medium bowl, whisk together mayonnaise, Dijon mustard, honey, hot sauce, smoked paprika, lemon juice, salt, and pepper until smooth. Refrigerate until ready to use.
  3. In a shallow dish, mix together flour, paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt.
  4. Remove marinated chicken from buttermilk. Let excess drip off before dredging in flour mixture. For extra crunchiness: dip back into buttermilk and dredge again in flour mixture.
  5. Heat oil in your skillet to 350°F (175°C). Carefully add chicken fillets: fry each side for about 4–6 minutes until golden brown. Ensure internal temperature reaches 165°F. Drain fried chicken on a wire rack.
  6. Spread butter on brioche buns. Toast them in a skillet until golden brown.
  7. On each bottom bun, spread prepared sauce, layer pickles, add crispy fried chicken fillet, drizzle with more sauce if desired, then cap with the top bun.
  8. Enjoy your spicy chicken sandwiches hot! Pair them with fries or coleslaw for an unforgettable meal.
