  • 1 cup grated zucchini

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1 8 oz package reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×9 inch baking dish.
  3. In a bowl, mix beaten eggs, brown sugar, canola oil, honey, and vanilla until blended.
  4. Stir in grated carrot and zucchini.
  5. In another bowl, combine flour, baking powder, ground ginger, and baking soda; mix into the wet ingredients until just combined.
  6. Fold in chopped walnuts if desired.
  7. Pour batter into the prepared dish and bake for about 25 minutes or until a toothpick comes out clean.
  8. Cool before frosting with mixed cream cheese, icing sugar, and lemon zest.
