- 1 large egg
- 430 g bread flour
- 5 g sea salt
- 8 tbsp unsalted butter (113 g)
- Filling: 5 tbsp unsalted butter, ½ cup cane sugar, 2 tbsp cocoa powder, 1 cup semi-sweet chocolate chips
- Topping: ¼ cup whole milk, ¼ cup cocoa powder, 1 cup powdered sugar, 1 tsp vanilla
Instructions
- Warm the whole milk to lukewarm. In a mixing bowl, combine it with the sourdough starter and cane sugar. Mix well.
- Add the egg and stir until combined. Gradually mix in the bread flour and sea salt until a smooth dough forms; then knead in the butter until fully absorbed.
- Transfer the dough to a greased bowl, cover it, and let it rise for about 4-6 hours or until doubled in size.
- Prepare the filling by mixing softened butter with sugar and cocoa powder; fold in chocolate chips.
- Roll out the risen dough into a rectangle, spread the filling evenly, roll tightly into a log shape, and slice into pieces.
- Place on a lined baking sheet to rise again for an hour before baking at 375°F (190°C) for about 30 minutes until golden brown.
- For the topping, whisk together milk, cocoa powder, powdered sugar, and vanilla; drizzle over warm rolls before serving.
