  • 100 g active sourdough starter
  • 70 g cane sugar
  • 1 large egg
  • 430 g bread flour
  • 5 g sea salt
  • 113 g unsalted butter (8 tbsp)
  • 5 tbsp unsalted butter (for filling)
  • ½ cup cane sugar (for filling)
  • 2 tbsp cocoa powder (for filling)
  • 1 cup semi-sweet chocolate chips
  • ¼ cup whole milk (for glaze)
  • ¼ cup cocoa powder (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 1 tsp vanilla (for glaze)

Instructions

  1. In a mixing bowl, blend whole milk and active sourdough starter. Add cane sugar and egg; mix well.
  2. Gradually stir in bread flour and salt until a shaggy dough forms; knead in softened butter until smooth.
  3. Place dough in a greased bowl, cover, and let rise at room temperature until doubled in size (4–6 hours).
  4. Roll out the dough into a rectangle; spread softened butter over it.
  5. Sprinkle cane sugar and cocoa powder on top; distribute chocolate chips evenly.
  6. Roll tightly into a log and cut into 12 equal pieces.
  7. Place on a lined baking sheet; cover and let rise again for 30–45 minutes until puffy.
  8. Preheat oven to 350°F (175°C) and bake for about 25–30 minutes until golden brown.
  9. Prepare the glaze by whisking together milk, cocoa powder, powdered sugar, and vanilla until smooth, then drizzle over slightly cooled rolls.
