  • 1 1/22 lbs top sirloin steak
  • 1 lb baby red potatoes (cut into 1 1/2” chunks)
  • 2 bell peppers (cut into 1 1/2” chunks)
  • 2 small or 1 large zucchini (sliced)
  • 1 large red onion (cut into 1 1/2” chunks)
  • extra virgin olive oil
  • salt and pepper
  • 1/3 cup extra virgin olive oil
  • 1/3 cup reduced sodium soy sauce
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 TBS EACH onion powder, garlic powder
  • 1 tsp EACH paprika, pepper, dried basil, dried dill weed
  • 1/2 tsp EACH dried oregano, dried rosemary, ground coriander
  • 1/21 teaspoon red pepper flakes

Instructions

  1. Prepare the Marinade: In a large bowl or zip-top bag, whisk together marinade ingredients (reserve some for veggies).
  2. Marinate Steak: Add steak to marinade; cover and refrigerate for 2 to 6 hours.
  3. Pre-cook Potatoes: Microwave potatoes with water in a covered bowl for about 4–5 minutes until tender; drain.
  4. Prepare Veggies: Toss bell peppers and onions with drained potatoes and reserved marinade; refrigerate.
  5. Soak Skewers: Soak wooden skewers in water for at least 30 minutes.
  6. Assemble Kabobs: Thread steak and vegetables onto skewers and grill or bake until cooked through.
