  • 1 chopped Onion
  • 2 cloves Garlic
  • 1 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 cup Long Grain White Rice
  • 1/2 cup Water
  • 1 cup Cherry Tomatoes
  • 2 cups Shredded Lettuce
  • 1 cup Corn Kernels
  • 1 cup Black Beans
  • 1 cup Cheddar Cheese
  • 1 cup Fresh Cilantro
  • 1 juiced Lime
  • 1/2 cup Sour Cream

Instructions

  1. Cook the rice by boiling 2 cups of water and adding rice and salt. Cover and simmer for 15-20 minutes.
  2. In a skillet, heat olive oil and sauté chopped onions and minced garlic until soft. Add ground beef or mushrooms along with spices; cook until browned.
  3. Stir in water or broth and let simmer for 5 minutes before adding cherry tomatoes, corn, and black beans.
  4. In serving bowls, layer rice at the bottom, top with the meat mixture, shredded lettuce, cheese, cilantro, lime juice, and sour cream.
