- 2 large potatoes, cut into thick fries
- 2 tbsp olive oil

Instructions
- Rinse 1 cup of long-grain white rice under cold water. Combine in a pot with 2 cups of water and 1 tsp salt; bring to a boil, cover, and simmer on low for 15 minutes.
- Preheat the oven to 220°C (425°F). Cut 2 large potatoes into thick fries, toss with 2 tbsp olive oil, 1 tsp salt, and 1 tsp paprika; spread on a baking tray and bake for 20-25 minutes until golden.
- Heat 1 tbsp olive oil in a skillet over medium-high heat; add bite-sized pieces from 2 boneless chicken breasts and cook until browned.
- Add sliced onion, green bell pepper, red bell pepper, and minced garlic; sauté for about 3-4 minutes until vegetables soften slightly.
- Stir in soy sauce (2 tbsp), oyster sauce (1 tbsp, if using), black pepper (1 tsp), and chili flakes (1 tsp); cook for an additional minute to meld flavors.
