Instructions

  2. Toss zucchini, bell peppers, cherry tomatoes, and red onion in olive oil; season with salt, pepper, and dried Italian herbs. Spread on the baking sheet.
  3. Roast for 20–25 minutes until caramelized and tender.
  4. Meanwhile, boil salted water in a large pot. Cook orzo according to package instructions until al dente; drain.
  5. In a mixing bowl, combine cooked orzo with roasted vegetables. Drizzle with lemon juice and sprinkle parsley over top; toss gently to mix.
