  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 large head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roast the garlic wrapped in foil for about 30 minutes until soft.
  3. Grease a 9×13-inch baking dish.
  4. Thinly slice the potatoes using a mandoline.
  5. Layer the potato slices upright in the baking dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the parmesan, thyme, nutmeg, salt, and pepper; heat until melted.
  7. Squeeze roasted garlic cloves into a bowl, mash into a paste, and stir into the cream mixture.
  8. Pour the creamy mixture over the layered potatoes and cover with foil.
  9. Bake for 1 hour and 15 minutes covered; then uncover, add remaining cheese, and bake for an additional 15 minutes until golden brown.
  10. Let cool slightly before serving and garnish with fresh chives.
