  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Fresh basil (1 bunch, divided)
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat the oven to 400°F.
  2. In a baking dish, mix together cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Bake for 20 minutes until the tomatoes burst. Let cool.
  3. In a blender, combine ricotta, 1 minced garlic clove, 1 tablespoon olive oil, basil leaves, salt, and pepper. Blend until smooth and refrigerate.
  4. Slice the bread into twelve pieces. Brush both sides with a mixture of remaining olive oil and minced garlic. Toast in the oven for 10-12 minutes until golden brown.
  5. Assemble by spreading ricotta on each toast, topping with roasted tomatoes, fresh basil leaves, and a drizzle of balsamic glaze.
