Ingredients

  • 68 ripe large peaches (about 3 pounds)
  • 1/2 cup granulated sugar (for peach puree)
  • 1 tablespoon fresh lemon juice (for peach puree)
  • 1 1/2 cups freshly squeezed lemon juice (from 810 medium lemons)
  • 1 cup granulated sugar (for simple syrup)
  • 46 cups cold water (to taste)
  • Fresh peach slices, lemon wheels, and mint sprigs for garnish

Instructions

  1. Wash, pit, and dice peaches. In a medium saucepan, combine diced peaches with sugar, water, and lemon juice. Simmer for 10-15 minutes until soft.
  2. Mash cooked peaches and strain through a fine-mesh sieve into a bowl to get smooth puree; cool to room temperature.
  3. For simple syrup, heat sugar and water in a small saucepan until dissolved; let cool.
  4. Juice lemons to yield 1 1/2 cups of juice; strain to remove seeds/pulp.
  5. In a pitcher, mix cooled simple syrup with strained lemon juice. Stir in peach puree and add cold water gradually until desired taste is reached.
  6. Chill for at least 30 minutes before serving over ice garnished with peach slices, lemon wheels, and mint.
