- 2 cups granulated sugar
- 1 tablespoon mustard seeds
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon ground cloves
Instructions
- Prepare vegetables by dicing cucumbers, zucchini, onions, and peppers. Soak in water with pickling salt overnight.
- Rinse the vegetables under cold water and squeeze out excess moisture.
- Chop tomatoes and remove seeds; set aside.
- In a large saucepan, combine chopped tomatoes, vinegar, and spices; bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Add sugar and drained vegetables; bring to a boil again and simmer for an additional 20 minutes.
- Fill sterilized jars with the hot mixture and process in a water bath for 15 minutes.
