  • 1/2 cup uncooked quinoa (rinsed)
  • 1 mango (diced)
  • 1 avocado (sliced)
  • Cucumber (diced)
  • Vegan spicy mayo, store bought or homemade (for topping, optional)
  • Sesame seeds (for serving, optional)

Instructions

  1. Rinse quinoa under cold water; combine with 1 cup of water in a medium saucepan. Bring to a boil, then reduce heat and simmer for about 15 minutes until water is absorbed.
  2. While quinoa cooks, dice tomatoes. In a mixing bowl, whisk together soy sauce, rice vinegar, sesame oil, and grated ginger. Add diced tomatoes and mix well.
  3. Fluff the cooked quinoa and divide into bowls. Top with the tomato-tuna mixture, diced mango, sliced avocado, and cucumber.
