  • 1/2 teaspoon baking soda
  • 1.5 teaspoons pumpkin pie spice
  • pinch of salt
  • 1/3 cup chocolate chunks (+ more for topping, if desired)
  • 1 large egg
  • 1/2 cup creamy cashew butter (drippy)
  • 1/2 cup unsweetened pumpkin puree
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch x 8-inch baking dish.
  2. In a medium bowl, mix together rolled oats, flour, coconut sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In a large bowl, combine egg, cashew butter, pumpkin puree, maple syrup, and vanilla; whisk until smooth.
  4. Gradually add dry ingredients to wet mixture; stir until just combined.
  5. Pour batter into the prepared baking dish and spread evenly.
  6. Sprinkle additional chocolate chunks on top if desired.
  7. Bake for 18–22 minutes or until a toothpick comes out clean.
  8. Cool for about 10 minutes before slicing into squares.
