  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar for glaze
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon for glaze

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini donut pan.
  2. In one bowl, mix dry ingredients: flours, spices, baking powder, baking soda, and salt.
  3. In another bowl, whisk together wet ingredients: egg, brown sugar, oil, vanilla extract, and pumpkin until smooth.
  4. Combine wet and dry mixtures until just blended.
  5. Pipe the batter into the donut pan halfway full.
  6. Bake for 6-7 minutes until springy; cool on a wire rack.
  7. Prepare the glaze by mixing powdered sugar, maple syrup, corn syrup, water, and cinnamon. Dip cooled donuts in glaze before serving.
