  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 2 large eggs (at room temperature)
  • ½ cup (120g) vegetable or canola oil
  • 1 cup (240g) pumpkin puree
  • 1 cup (112g) powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon maple flavoring

Instructions

  1. Preheat the oven to 425°F. Prepare muffin pan by lining it with cupcake liners or greasing it lightly.
  2. In a bowl, mix flour, sugars, and cinnamon for the streusel; add melted butter until crumbly.
  3. In another bowl, whisk together flours, sugar, baking powder, baking soda, salt, and spices. Add eggs, oil, and pumpkin; mix gently until just combined.
