  • 425g canned pumpkin puree
  • 2 1/4 tsp active dry yeast
  • 150g whole milk (lukewarm)
  • 565g all-purpose flour
  • 4 tbsp brown sugar
  • 2 large eggs (lightly beaten)
  • 120g unsalted butter (room temperature)
  • 225g unsalted butter (for filling)
  • 360g brown sugar (for filling)
  • 165g cream cheese (for icing)
  • Maple syrup and espresso powder (for icing)

Instructions

  1. Combine lukewarm milk and yeast in a bowl; let sit until foamy.
  2. In a stand mixer, mix flour, salt, cinnamon, cardamom, and brown sugar.
  3. Add yeast mixture, eggs, vanilla bean paste, pumpkin puree, and softened butter; mix until smooth.
  4. Transfer to a greased bowl; cover and let rise until doubled in size (about 1 hour).
  5. Prepare the filling by combining softened butter with brown sugar, reduced pumpkin puree, cinnamon, cardamom, and salt.
  6. Roll out dough into a rectangle; spread filling evenly over it.
  7. Roll tightly into a log shape; slice into 12 pieces.
  8. Place on baking sheets; cover and let rise until doubled in size (30–45 minutes).
  9. Preheat oven to 350°F (175°C) and bake for 25–30 minutes until golden brown.
  10. Mix icing ingredients while rolls bake; drizzle over warm rolls once out of the oven.
