Ingredients

Scale
  • 4 pounds boneless pork shoulder
  • 1 large yellow onion
  • 1 can ginger beer (12 ounces)
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk (warmed)
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Place the trimmed pork shoulder in a slow cooker or Instant Pot. Add sliced onions and pour ginger beer over the meat. Cook on low for 6-8 hours in a slow cooker or use the pressure cook setting for about 60 minutes.
  2. While the pork cooks, boil salted water in a large pot. Add elbow macaroni and cook until al dente. Drain and set aside.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth to create a roux. Gradually add warmed milk while whisking until thickened. Stir in shredded cheddar until melted and creamy.
  4. Once the pork is cooked, shred it with two forks and combine it with the drained pasta in a large bowl. Pour in the cheese sauce and mix thoroughly.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a baking dish, drizzle additional BBQ sauce on top if desired, and bake for 20-30 minutes until heated through.
