Ingredients
- 1 medium onion, grated
- 4 medium potatoes, grated and drained
- 3 eggs
- 4 tablespoons all-purpose flour
- Sea salt and black pepper to taste
- 150g fresh mozzarella cheese, shredded
- Olive oil for frying
Instructions
- In a mixing bowl, combine grated onion and drained potatoes. Add eggs, flour, salt, and pepper; mix well to form a batter.
- Heat olive oil in a non-stick pan over medium heat. Drop spoonfuls of the batter into the pan and cook until golden brown (about 2 minutes per side). Transfer to paper towels to drain excess oil.
- Preheat oven to 200°C (400°F). In another bowl, mix chopped tomatoes with half of the mozzarella.
- Place pancakes on a baking tray; top with tomato mixture and remaining mozzarella. Bake for 15 minutes or until cheese is melted.
- Serve warm with your choice of garnishes.
