Ingredients
- 3 ½ – 4 lb pork shoulder
- ½ lb bacon
- 1 large onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 x 500 ml can hard cider (or apple juice)
- 3 cups chicken broth
- 1 cup prunes
- 2 apples
Instructions
- Trim excess fat from the pork and cut into chunks. Dice the onion and mince the garlic.
- In a large Dutch oven, heat olive oil over medium-high heat. Brown the pork in batches; set aside.
- Cook bacon until crispy; remove and drain on paper towels.
- Sauté onions until softened, add garlic and deglaze with hard cider.
- Stir in mustards, thyme, and salt; return pork along with broth to the pot.
- Simmer covered on low for one hour; skim fat as needed.
- Add prunes and bacon; simmer for another 15 minutes.
- Add sliced apples; cook until tender.
- Thicken with cornstarch slurry if desired before serving.
