  • 6 Granny Smith apples (or 12 small)
  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring

Instructions

  1. Prepare your workspace by greasing baking paper on a tray and inserting bamboo skewers into the apples.
  2. In a saucepan, combine sugar, water, corn syrup, and black food coloring over medium heat. Stir until the sugar dissolves.
  3. Stop stirring and wash down the pot sides with a wet brush. Cook until it reaches hard crack stage (150ºC/310ºF).
  4. Dip each apple in the toffee mixture, coating thoroughly, then let excess caramel drip off.
  5. Place dipped apples on the prepared tray and allow them to cool completely before serving.
