  • ¾ cup (150 grams) granulated sugar
  • 3 tablespoons (21 grams) cornstarch
  • ½ teaspoon (3 grams) coarse kosher salt
  • 3 large eggs
  • 3 cups (680 grams) milk
  • 1 teaspoon almond extract
  • 2 tablespoons (30 grams) unsalted butter
  • 2 tablespoons (30 grams) cream cheese, softened
  • 2 tablespoons (30 grams) granulated sugar (optional)
  • ¼ teaspoon vanilla extract (optional)
  • 1 cup (230 grams) heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix flour, powdered sugar, and salt. Cut in butter until crumbly. Beat in one egg and press into a pie dish. Bake for 20 minutes until golden; cool completely.
  2. In a saucepan over medium heat, combine pistachios, granulated sugar, cornstarch, and coarse salt. Gradually whisk in milk until smooth. Stir constantly until thickened; remove from heat. Stir in almond extract and butter until melted. Slowly mix in three beaten eggs.
  3. Pour the filling into the cooled crust and refrigerate for at least two hours.
  4. For the topping, beat heavy cream until soft peaks form; add optional sugar and vanilla if desired and beat until stiff peaks form.
  5. Spread the whipped cream over the set filling and garnish with chopped pistachios before serving.
